2023 Ravine Gëwurztraminer
The Gewürztraminer berries that went into this bottle of wine were harvested near the lake during the early morning when temperatures were the coolest. The fruit was double berry sorted meaning only the cleanest pink berries and juice made their way into the press where it soaked on the grape skins for a 2.5 hours. Fermentation occurred in stainless steel tanks under even colder controlled temperatures. The fermentation was thriving and chugging along but based on flavour profile and crisp nature of this light floral wine, we didn’t want to run completely dry or finish hot so we stopped fermentation around 11.5% alcohol and almost 13 grams of residual sugar. per litre.
