2021 Ravine Cabernet Sauvignon
As cool climate and a challenging 2021, Ravine managed to grow and pull off this intense, bold, flavourful red. It was also the first time we had the chance to work with the Cabernet Sauvignon from our Creek road property where vines are over 25 years old, densely planted, spur pruned and low yield. We blended what we got from our Creek road property with our fruit from our Organic estate. These are two completely different sites with different proximities to the lake and escarpment; one with sloped sandy soil vs flat alluvial soils. So it’s neat to see the variance in fruit and see the harmonious blend come together. Berries were destemmed, fermented in stainless steel tanks and some fermenting bins. Temperatures were controlled and we used an organic yeast. Pump overs were twice a day and we pressed just as the cap was starting to fall. Finished with malolactic fermentation in tank and then sent to barrel before the new year.
