A first sip presents an oily round mouthfeel that progresses into a savoury, saline and
rich feel. Slowly moving into a lean and subtle dry finish. Appreciate the good acidity
and subtle amount of phenolics that allow for this wine to be extremely food friendly.
On the nose, there is a chalky minerality, honeysuckle blossom, ripe apple, apricot,
sweet buttercream, and warm baking spice.
On the palate, aromas are met with flavours of lemon custard, golden delicious apple,
butterscotch, baking spice, and that hint of the freshly cracked caramelized sugar on
to of crème brûlée.

Winemaker Notes
From the St. David’s Bench Appellation, rich with sand, silt and limestone, our Reserve Chardonnay
is made from only our estate grown organic fruit that is planted on the north facing
slope. 85% hand picked, whole cluster pressed and the remainder we destem and crush. The
yeast used for these ferments were organically sourced. One barrel was inoculated with wild
yeast propagated during October’s full moon. All settled juice was inoculated and filled into
French oak vats (225L barriques and 450L puncheons). Lees stirred weekly for a year, while
adding malo lactic bacteria into the barrels.
This year all estate Chardonnay barrels made the cut resulting in a 60:40 split blend (blocks
548-76). This vintage is soft, elegant, supple. I love that it’s a delicate expression of cool climate
Chardonnay. With just the right amount of acidity to help frame everything together. 2020 has
been one of the best vintages ever for whites as the Autumn had cool dry nights perfect for
keeping disease pressure low and preserving freshness. This is going to be a favourite to enjoy
for years to come.
Food Pairing Notes
Pair this wine with Niagara Gold cheese, Serrano ham, crab legs, foie gras, and
miso. Will work well with seared scallops with pancetta and corn or with roasted
chicken, wild rice, and scalloped potatoes.
Go for clean simple concentrated flavours. However, fat is favourable!
