The way we grow some of our Cabernet Franc for Rosé is no coincidence. We grow it at a higher yield to retain acidity, but hang it late to capture full, ripe flavours. Instead of thinning the fruit, we taste for freshness and pick the fruit depending on its acidity. Tasting Note: This wine is a very pale colour. It has a bright nose of cranberry, juicy watermelon and zippy blood orange. In the mouth it is dry and refreshing. It finishes with a nice lingering berry finish.
Food Pairing: Rosé is a very versatile wine for food pairing. It is great with a caprese salad with garden fresh tomatoes. It is also fabulous with grilled shrimp in a lemon, thyme marinade.
