Fermented with 100% wild yeast, the 2016 Chardonnay is a wonderful expression of its varietal. It is barrel fermented as well as barrel aged to enrich texture and build complexity in flavour while being driven by the terroir of the mineral rich clay soil of the St. Davids Bench and the cool climate of the Niagara Peninsula. The 2016 Chardonnay is pale straw in colour. It shows lifted aromas of honeysuckle, fresh ripe pear and warm vanilla custard. Silky smooth on the palate, this wine has a fresh finish and is built on a backbone of acidity. This Chardonnay will pair nicely with creamy Alfredo based pastas as well as classic roast chicken dinners.
